Jarlsberg Quesadillas

  • 150g Jalsberg Special Reserve

  • 2 Tomatoes

  • 150g Bacon

  • 1 shallot

  • Half a chilli

  • Half a clove of garlic

  • Juice of 1 line

  • 2 Wheat tortillas

  • 2 Tablespoon of coriander

  • Salt & pepper

  • 1.

    Slice the Jarlsberg thinly

  • 2.

    Fry the bacon and take the chillis and remove all the seeds

  • 3.

    Finely chop all the salsa ingredients – tomato, shallot and garlic and then mix together with the limejuice

  • 4.

    Layer the cheese, bacon and a big spoon of the salsa fresca on half of each tortilla

  • 5.

    Fold the other half over. Press it together and toast for about a minute on each side in a medium-hot, dry pan

  • 6.

    Cut each tortilla into four and serve with the rest of the salsa fresca on the side
